Ripened for only two months, this beautiful dark blue cheese is mild and creamy. 

Characteristics: Creamy, subtle, buttery, lightly piquant, top notes of clover and hint of onions.

Best with: Bleu d’Auvergne’s creaminess and relative mildness mean it is excellent in blue-cheese dressings.
