The troglodite of cheeses, Bleu des Causses is matured in the limestone caves that pockmark its native southern France – you can taste the minerals.
Characteristics: creamy, spicy, fresh and sharp.
Best with: A less salty alternative to Roquefort, Bleu des Causses works really well with the juicy sweetness of ripe pears.
