Brie d’Ile-de-France
Origin: France
Region: Ile-de-France
Made by: Société Fromagère de Raival
Type: Soft
Milk: Cow
Treatment: Pasteurised
Coagulant: Traditional Rennet
Loved by royalty from Charlemagne onwards, this Brie is one of only two types made artisanally in its original home just east of Paris. This is the pasteurised version of the great Brie de Meaux that they make.
Characteristics: while young its flavours are nutty with a hint of mushroom; as it ages, it develops pungency and a deeper, slightly acidic taste.
Best with: Can you really improve on a slice of Brie, a fluffy, fresh baguette and a few grapes? We don’t think so.
