The fondant pudding of cheeses, burrata looks similar to a mozzarella ball but cut it open and its milky interior oozes out.
Characteristics: milky, fresh, light, with none of the rubberiness of mozzarella.
Best with: mash it to serve with grilled peaches or figs and a drizzle of olive oil.
