Originating in the Nouvelle-Aquitaine region of France, these delicious little discs of goat’s cheese have a mould rind that is allowed to develop naturally.

Characteristics: a soft, almost fluffy bloom and delicate taste with slight tang of grass.

Best with: serve it with a few thyme leaves to bring out its natural flavours.
