This familiar, log-shaped cheese is matured for only a few days keeping its “goatiness” at the subtle end of farmyard spectrum.
Characteristics: pale paste; creamy texture on the outside, crumblier on the inside; sweet caramel flavours.
Best with: its mildness makes it a great addition to goat’s cheese tarts.
