Inspired by Gouda from the Willemses’ native Holland but made in the hills of their adopted Co Cork, Coolea has been showered with awards over the past 20 years ago.
Characteristics: firm, golden paste contained in a yellow wax; rich, fruity, nutty flavours and butterscotch tang.
Best with: we don’t want to lower the tone but it’s great melted over a burger and slapped in a bun.
