Across the border from Leicestershire’s Stilton, Nottinghamshire’s Shropshire Blue is another fine English blue, distinguishable from its more famous neighbour by its orange-coloured paste.

Characteristics: golden-orange paste with deep blue veining; rich, creamy, buttery with tang of burnt caramel.

Best with: its makers suggest mixing it into Yorkshire puddings
