A small, disc-shaped goat’s milk cheese, washed in Somerset cider brandy and wrapped in a vine leaf.

Characteristics: unctuous and creamy with a slight citrus tang when young, developing stronger, nuttier flavours as it ages.

Best with: a cold glass of Loire Valley Sauvignon Blanc.
