The Mahers have been making cheese at their farm in the heart of Co Tipperary for four generations and Gortnamona is a belter.
Characteristics: snowy-white mould-ripened rind; creamy, runny interior; mushroomy and delciately goaty.
Best with: great grilled on top of a slice of fried black pudding.
