Gorgonzola has been made for centuries in the mountains and foothills of north-west Italy – dolce is its milder form.
Characteristics: pale yellow paste suffused with blue veins; creamy, salty, rich, hint of mushroom.
Best with: Gorgonzola is used widely in Italian cookery from topping pizza to stuffing it in chicken breasts.
