Dodoni Halloumi is made according to authentic Cypriot cheese making practice. So, it is made with a mix of milks, and fragments of mint are crumbled on to the surface of the cheese, which helps keep it fresh.
It is delicous raw, fried, grilled or baked – for breakfast, lunch or dinner.

Characteristics: slightly springy in texture, strong salty flavour.

Best with: salad, aubergine or falafel.
