This cheese from Lincolnshire is made from milk from Holstein Fresian cows and aged for 18-22 months to produce its signature taste.

Characteristics: This aged cheese is compact and chewy, with a creamy, rich, nutty character that is sweet, yet balanced by a feisty acidity that hints of green grass.  The finish is bitter-sweet and long lasting.

Best with: Try it with a spicy chilli jam or a ploughman’s chutney.
