The brine-and-annato washed, Normandy cousin of Langres, Livarot’s five strips of raffia binding give it the nickname “The Colonel”. 

Characteristics: soft paste encased in orange rind; supple, pungent; spicy, unctuous, salty.

Best with: traditionally, Livarot is baked with hole to accommodate a glug of Calvados.
