Occupying the ground somewhere between a Gouda and a Cheddar, this youthful cheese is mild and delicious.
Characteristics: golden rind, tiny holes in pale yellow paste; moist, supple, mellow and sweet.
Best with: it’s great in a toasted sandwich.
