As Spanish as the arid hills from where it comes, the baskets in which it is formed give manchego its herringbone rind.
Characteristics: brown rind; hard, crumbly with slight crunch of salt crystals; aroma of leather and wool with taste of fruit, butter, nuts and sweetness.
Best with: toasted almonds and a small chilled manzanilla.
