Matured for only half the time of its aged dairymate, semi-curado is moist and fresh ewe’s milk cheese.

Characteristics: semi-hard, slightly crumbly; flavours of dried fruits, roasted nuts, acid notes of green olives.

Best with: a slice of jamon iberico.
