Despite being known as the “vieux paunt” (old stinker) in its native Picardy, Maroilles was a cheese beloved by French royalty for its wonderful flavours.
Characteristics: square shaped with ridged, light brown crust; pungent, sweet, fermenting fruit aroma; salty, slightly meaty quality and a lemony tang.
Best with: delicious in a “flamiche”, the Picardy version of a quiche.
