First produced more than 150 years ago, these tiny cheeses are matured in unusually damp conditions and then left to dry out on the leaves of sweet chestnuts.
Characteristics: small, medallion shaped; white paste; citrus flavour with light aroma.
Best with: its lightness means that it can be overwhelmed, so pair it with a slice of walnut bread which will act as a foil to its delicate flavours.
