Aged for just a month, Pecorino Fresco is derived from a medieval recipe and made throughout Tuscany – il Fiorino is one of the smaller, more artisanal makers.
Characteristics: the palest of milky whites, soft and slightly crumbly; sweet, nutty flavours with a hint of lemon.
Best with: drizzle with a little truffle oil.
