Known as “white meat” in its native Alsace, this rind-washed cheese has a wonderful taste but is as renowned for its pungency as its flavour.
Characteristics: orange rind with pale, slightly runny paste; strong earthy, meaty flavours.
Best with: traditionally served with a sprinkle of cumin.
