Often called “Valdeon”, Picos is instantly recognisable by its wrapping of maple or chestnut leaves and its intense blue veining.
Characteristics: pale yellow paste with heavy blue speckling; moist texture; creamy, buttery, peaty flavours with a piquant finish.
Best with: Yotam Ottolenghi – who can do no wrong – uses it in a savoury cheesecake.
