Found on the plains of Central France, this traditional cheese can be made of goat’s milk or a combination of cow’s and goat’s milk and intensifies in flavour as it ages. 

Characteristics: cylindrical shape; blue-grey bloom; tangy and peppery and becoming more nutty and strong as it matures.

Best with: pair it with a white Burgundy which hails from the same region.
