The cheese of love, Roquefort was discovered when a shephered abandoned his plain cheese to visit his sweetheart and returned to find it pocked with blue.

Characteristics: moist, white with dark blue flecking;  smooth, almost spreadable texture; milky aroma;  salty, fruity flavour with delicate complexity and a strong, tangy finish.

Best with: bake it with large portobello mushrooms.
