Inspired by Saint Nectaire, it was during the pandemic that the development of St Helena started in earnest. Made with raw milk from a local family farm, the cheese is washed with brine to encourage the development of the beautiful pink rind.

Characteristics: Supple and fudgey, with a delicate silky texture. You will notice a buttery paste with subtle soured milk flavours and earthy notes on the edible rind - it hides a surprisingly rich and long aftertaste for such a delicate cheese!

Best with: Exceptional with perry.
