Its purplish rind and special aroma are what sets Saint Nectaire apart from other cheeses – it is matured for almost two months on rye straw mats.
Characteristics: grey-ish purple washed rind with flecks of white yellow and red moulds; silky creamy texture; flavours of hazelnuts, hay, minerals and mushrooms.
Best with: a rustic red wine or cider.
