A modern cheese created in 2015, Sheep Rustler (named after its inventor, Russell) is a more mature version of the company’s wonderful Rachel.

Characteristics: golden washed-rind cheese; semi-hard; medium sweet flavour with nutty taste and hint of caramel.

Best with: don’t overpower it – some seeded crackers and perhaps a salted piece of celery.
