Stärnächäs translates as ‘star cheese’, and it has certainly become a star in the world of artisan cheese. As well as receiving many other prizes, it has twice won gold at the International Cheese Awards.

Stärnächäs is aged for 8 months. The production takes place at the bottom of the Sdntis, a famous Swiss mountain.

In Stärnächäs, Gruyère meets Appenzeller, and the result is a sensation.

Characteristics: the taste is enormously complex and fruity, and it has a supple, lightly crystaline texture.

Best with: a hard cider or a sweeter Riesling. It makes great fondue too.
