Unlike traditional crumbly Wensleydale, the Spences use a slower, pre-war recipe to give the cheese a smoother texture. It is then clothbound with butter and aged for 3 months before release.

Characteristics: All the lemon yogurt acidity you would expect from a Wensleydale, with mineral, earthy tones closer to the rind.

Best with: Its makers recommend pairing it with handmade fruitcake and a thick layer of butter.
